
Seems like more and more friends are going gluten-free these days. These deceptively simple cookies turn out chewy/crispy and deliver protein and sugars to hungry wanderers. Adapted from Allrecipes.com.
2 cups peanut butter
2 cups brown sugar
4 eggs, beaten
2 cups chocolate chips (optional)
1 1/2 cups chopped pecans (optional)
Mix the first 3 ingredients well then stir in your chocolate chips and pecans. Scoop dough by the tablespoon onto a greased cookie sheet (important!). Bake at 350F for 10 to 12 minutes and let cool about 5 to 10 minutes before removing, just to harden them up a bit. Yields 30 cookies. Per cookie: 220 calories, 12g fat, 6g protein, 2g fiber.
