
Lots of healthy fats and antioxidant ingredients in these yummy cookies! They’re soft, cake-y, and they’re great with a glass of milk as a recovery food or pre-run, pre-ride breakfast. The ginger, cloves and honey give them a bit of a lebkuchen taste!
1/3 cup canola or olive oil
1/2 cup honey
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves
3/4 teaspoon salt
2 teaspoons vanilla extract
1 large egg
2 tablespoons maple syrup
1 cup shredded raw sweet potato
1/2 cup dried cranberries or blueberries
1/2 cup bittersweet chocolate chips
1/2 cup chopped raw almonds
1 cup whole wheat flour
1 1/2 cups quick rolled oats
Mix everything except the flour, soda, and baking powder in a large bowl. Mix the three remaining dry ingredients together in a separate bowl. Add the wet and dry mixtures together, stirring until just moistened.
Using a tablespoon, drop large balls of dough on a greased cookie sheet. You can crowd them fairly close because they don’t spread out too much. Bake at 350F for about 12 minutes. Don’t over-bake them or they’ll get dried out.
Yield: about 25 large cookies.
