Chocolate Macaroons
2 cups dried, unsweetened coconut
1 cup cocoa powder
3/4 cup maple syrup
1 T. vanilla extract
3 T. coconut oil
1/4 t. sea salt
Preheat your oven to 250 degrees. Mix the coconut flakes, chocolate powder, maple syrup, vanilla extract, coconut oil and sea salt in a large bowl. You can use a large spoon or an electric mixer. Grease a cookie sheet, with coconut oil. Use a small ice cream scoop to remove cookie dough and place on cookie sheet. Bake in the oven for 10 minutes. For an uncooked version, you can make these cookies in your dehydrator by placing the cookie dough on a Teflex-lined dehydrator tray. Set the temperature at 115 degrees and dehydrate for 8 hours.
