The original version of this simple salad uses canned corn and beans. While that makes things simple, we know it’s a good idea to avoid canned food if possible, and fresh or frozen corn and home-cooked beans work fine. This stuff is addictive, and it makes you long for your own garden peppers and onions, still warm from the sun!
1 1/2 cups (or one can) cooked corn
1 1/2 cups (or one can) cooked black beans
1 1/2 cups (or one can) cooked black eye peas
1 red and 1 orange bell pepper, diced small
1 yellow sweet onion, diced small
1 rib celery chopped fine
Italian dry dressing mix, mixed as directed on packet
Mix all ingredients with dressing and chill thoroughly. If you can find an Italian dressing recipe, you can cut down on some of the salt that commercial dressing mixes have by mixing your own.
