Beet Blueberry Kale Smoothie


Hello and welcome again to Smoothie Tuesday!

If you like beets–and I know some of you out there do–you’re going to love this kale smoothie. It tastes ridiculously good. I mean, ALL the smoothies on this site taste good of course; I don’t post a recipe if it isn’t highly delicious. But, trust me, I tested a lot of different configurations of beets and other things, and this one tastes the best.


Plus, as always, it will give you a pleasantly surprising jolt of energy, and leave you feeling like you just ate a complete breakfast. What could be better than that? Absolutely nothing in the world.

So, please enjoy this recipe, and, if you are so inclined, don’t hesitate to tell me your thoughts in the comments below! I also welcome constructive criticism or any ingenious modifications you want to share.

For example, after I concocted this recipe,  I continued to experiment further and found that adding a half cup of frozen cherries to this smoothie makes it even MORE delicious. I didn’t think it could get better, but there it was. Even better.

Prep time: 10 minutes

Blend time: 5 minutes

Total time: 15 minutes

Serves: 1-2


  • 1 tbsp fresh ginger
  • 1 medium-sized, raw beet
  • ½ cup apple juice
  • 1 banana
  • 1 tbsp coconut oil
  • 1 cup frozen blueberries
  • 1 leaf kale


  1. peel ginger
  2. peel beet
  3. add ginger and beet to blender and blend a little longer than you think necessary. The key here is to blend the beet smooth before you ad the other ingredients.
  4. peel banana
  5. de-stem kale

add all ingredients to blender, blend and serve!

    I cannot imagine using raw beets. I would think you would have to cook it first. Some beets are very large. How small do you cut it or do you dice it up first before putting into the blender? I love beets, and this looks intriguing!

    Wow, this smoothie was amazing! I added the frozen cherries as suggested and it was out of this world. Will definitely make it again. Thanks for sharing the recipe.
